This is one of my go to snacks! It’s simple, just so tasty and satiating. All you need are a few things to take your apples and snack time to the next level, and one of them is cashew butter! I was home and that time of day came around…snack time….
I was home, looking for a snack
Seemed like there was nothing I sought
Except for some green apples in a sack
But what can I eat with them I thought
Found some cashew butter in a jar
Oh so creamy and yummy
Also found cinnamon not too far
This will be real good in my tummy
And why not for some good ‘old zinc
Add some pumpkin seeds too
All these ingredients just link
After the first bite, I just knew
I created a delicious combination
And couldn’t wait to share
This delightful creation
With all of you out there.
What You Need
Corny poem aside, you will need just a few easy ingredients:
- Green apples (any type of apples will do, I just prefer green apples for a little tanginess)
- Cashew Butter (Artisana)
- Ceylon Cinnamon (the smell reminds me of Red Hots)
- Pumpkin Seeds (raw and/or sprouted)
This snack is great to take on a day hike, packing in a lunch, for a picnic, or even part of a charcuterie board!
Preparing Apples and Cashew Butter Snack
Most of the time I just cut apple slices around the core and spread cashew butter on top, then sprinkle the cinnamon and seeds. Another, more festive or fun way to prepare this snack, especially for presentation purposes, is to use an apple corer.
Remove the core from the apple, then slice it so the hole is in the middle. You should end up with apple rings which you can then spread the cashew butter on. They look like cute little holiday wreaths and thus, make a great festive snack for holiday parties and get togethers!
This Snack Packs Nutrients
Some reasons this snack is satiating is because it’s got lots of nutrients! Let’s take a look:
- Apples – full of fiber, potassium, vitamin C and antioxidants
- Cashew Butter – a healthy fat full of calcium, magnesium, potassium, and zinc.
- Ceylon Cinnamon – also known as “true” cinnamon, is loaded with polyphenols, has anti-inflammatory properties, and increases sensitivity to insulin.
- Raw Pumpkin Seeds – (or sprouted) “Pepita” in Spanish, also contains antioxidants, vitamin E, magnesium, zinc, and fiber.

Directions
- Wash then cut apple in slices. Or use corer and slice so the hole is in the middle for apple rings.
- Add desired dollop of cashew butter on apples or spread onto apple rings.
- Sprinkle desired amount of cinnamon and pumpkin seeds on apple slices.
- Enjoy!
